Mezcal can be made from up to 30 varieties of agave and in 9 different regions of Mexico. Tequila is made from blue agave, steamed and distilled several times in copper pots and can only be made in 5 regions of Mexico. Both tequila and other mezcal are made from the piña, or heart, of the agave plant.
